MY FAVORITE EASY TO MAKE MEAL

This has been a go to meal of mine for a while now because it’s somewhat healthy and oh so delicious! Sometimes I even make some brown rice or quinoa to go with it. Making food has always been a de-stresser for me. I like to watch a tv show or listen to a podcast while I cook! What do you do while you cook?

MY FAVORITE EASY TO MAKE MEAL

INGREDIENTS

  • 1 Sweet potato

  • 1 Shallot

  • 5-10 cherry tomatoes

  • 2 eggs

  • 1 cup of spinach

  • 1/4 cup of feta

  • 1/4 cup of shredded cheese

  • salt

  • pepper

  • Trader Joe’s everything but the bagel spice

  • avocado or coconut oil

INSTRUCTIONS

  1. Set oven to 350 degrees.

  2. Chop sweet potato into cubes, oil a pan, toss sweet potatoes, add salt & pepper then bake for 15-20 minutes.

  3. Thinly slice shallot, add to oiled pan, and cook until browned.

  4. Add one cup of spinach to slightly oiled pan, cook until soft. Be sure you don’t overcook or you’ll get spinach mush.

  5. Half cherry tomatoes, slightly oil pan, cook until soft, but again, don’t overcook.

  6. Oil pan, crack two eggs, add half the shredded cheese, start scrambling.

  7. Add the rest of the cheese, salt, and pepper, cook until done.

  8. Add everything to a bowl, dividing each ingredient into a section. Add feta to the middle.

  9. Top with salt, pepper, and Trader Joe’s everything but the bagel spice.

Alternate option: Make a bed of rice or quinoa and then top with everything.
